Fresh Sausages

Salumi San Giorgio Lucano® also has fresh sausages in three flavours: white with pepper, mild with Lucano pepper and hot.

They are prepared by the hands and knives of Master Butchers. After selecting cuts from amongst shoulders, prosciutto, loins and pancettas, they remove nerves and cut the meat.
At this point they are diced using the tip of a knife. It’s a real show watching the Masters as they dice it all. Arranged tidily along counters, at the right distance from each other, with fast, precise movements, almost synchronous like a percussion orchestra, men and women perform ancient, knowledgeable gestures, well aware that taste depends on that precision. Because the pieces must be just about the same size to give the mouthful, once cooked, that reassuring taste from the right volume of cubes and the full taste.
The diced meat is then mixed with natural flavours and the other ingredients for the three sausage types. They will then be stuffed in natural intestine, tied by hand with twine and quickly taken to the selling points.
